Dennis De Vriese (1996) studeerde geschiedenis aan de Vrije Universiteit Brussel (2014-2018). Tijdens deze studies legde hij zich toe op vroegmoderne geschiedenis en consumptiegeschiedenis. Dit resulteerde in 2018 in zijn master thesis over de relatie tussen voeding, eetcultuur en sociale ongelijkheid aan boord van schepen van de achttiende-eeuwse Oostendse Compagnie. Deze thesis werd vervolgens bekroond met de prijs De Bock-Doehaerd 2018. In november 2018 trad hij toe tot onderzoeksgroepen FOST (Social and Cultural Food Studies) en HOST (Historisch Onderzoek naar Stedelijke Transformatieprocessen) aan de VUB, in kader van zijn doctoraat. Dit onderzoek naar traditie en natuurlijkheid van vlees in de achttiende en negentiende eeuw, onder begeleiding van prof. dr. Wouter Ryckbosch, kaderde binnen het interdisciplinaire onderzoeksproject ‘Tradition and naturalness of animal products within a societal context of change’. In november 2019 werd hij doctoraatsbursaal bij het FWO (Fonds Wetenschappelijk Onderzoek) voor zijn huidig onderzoek naar de regulering van de laat- en post-corporatieve Brusselse vleesmarkt. Hierin focust hij op veranderende regulering, legitimeringen ervoor en hoe deze de stedelijke economie mee vorm gaven.
