This project aims at the unravelling of the biodiversity of a poorly understood complex food ecosystem (in casu cocoa) and at improving the genomic identification of lactic acid bacteria and acetic acid bacteria, an important basis for the development of high throughput identification and screening techniques and microarrays that are necessary for the development of new, functional starter cultures for food fermentation processes. The metagenome is the ensemble of microbial genomes present in a given environment and can be cloned, bypassing the cultivation of microorganisms. Metagenomic banks can be screened for interesting characteristics, such as the production of bioactive metabolites and enzymes. It should be stressed that the techniques to be developed in the frame of this project will be useful for other groups of microorganisms too.
